High Protein/Low Carb Carrot Cake Loaf

Did someone say carrot cake? Yes! This fan favourite can be made HEALTHY and still taste DELICIOUS

I received so many requests for this recipe after I uploaded a preview to my Instagram story while baking a few days back! It took a few days to perfect, so I hope you enjoy (I know I did)!

You may also add additional ingredients to this recipe for extra crunch or flavour such as nuts: walnuts, pecans etc. or different spices, don’t be scared to mix it up, that’s why I love suggesting modifications so you can make these recipes I provide exactly to your liking.

Have a slice breakfast, as a snack or for post-workout gains!

I personally enjoy it best toasted with some grass-fed organic butter, but the options to eat this are endless: spread a slab of nut butter, sliced bananas, chocolate chips, dip it in your coffee & the list goes on ;)

P R O T E I N C A R R O T C A K E L O A F

  • 1 large carrot, washed and grated

  • 1.5 cups organic rolled oats

  • 2 tbsp hemp seeds

  • 2 tbsp vanilla extract

  • pinch of Himalayan salt

  • 3 tbsp shredded unsweetened coconut flakes

  • 6 tbsp almond butter

  • 1/4 cup raw local honey

  • 2 organic eggs

  • 2 tbsp ground cinnamon

  • 1/3 tbsp nutmeg

  • 1/2 tsp baking soda

  • 1 tbsp baking powder

  • 1 large ripe banana, mashed

D I R E C T I O N S

  1. Preheat oven to 350F and grease a loaf pan, set aside

  2. Using a high-speed blender or food processor add 1 cup of oats and pulse until the oats become like a flour/powder consistency

  3. In a large glass bowl, add the oat flour, and 1/2 cup of oats then combine the remaining dry ingredients and whisk together

  4. Now add in all the remaining wet ingredients and mix until smooth and combined

  5. Pour mixture into greased loaf pan and place in the oven for approx. 25-30 mins until golden brown and firm

  6. Once the carrot cake is ready, allow to cool and store in the fridge or enjoy with some almond butter, or grass-fed butter & enjoy!
