BAKED Blueberry French Toast

Simple, not too sweet and full of healthy goodness!

Getting tired of making the same old breakfast recipes? Spice up your mornings with this delicious French toast that will keep you full and satisfied all morning long.

I N G R E D I E N T S

  • 5 slices seed/grain bread

  • 3 organic eggs

  • 1 tbsp vanilla extract

  • 1 cup coconut milk

  • 2 tbsp ground cinnamon

  • sprinkle of Himalayan salt

    For the blueberry compote:

  • 1.5 cups fresh or frozen blueberries

  • 2 tbsp fresh lemon juice

  • 1 tsp vanilla extract

D I R E C T I O N S

  1. Preheat the oven to 375F and lightly grease a glass baking dish in coconut oil or grass-fed butter

  2. Next, prepare the blueberry compote:

    • Add the blueberries, lemon juice and vanilla into a saucepan over med/high, boil and allow to cook down for 15 mins, stirring occasionally

    • Set aside and allow to cool and thicken

  3. For the French toast: combine eggs, coconut milk, vanilla, salt and cinnamon in a bowl

  4. Now dip your bread in to the mixture (making sure to coat both sides) and place in the glass dish

  5. Once all slices of bread are coated, pour the remaining batter over top the bread slices

  6. Lastly, evenly top the French toast with the blueberry compote, sprinkle some more cinnamon cover the baking dish with foil and place in the oven for 20-25 mins or until golden brown, and cooked through

  7. Once itโ€™s ready, serve hot with maple syrup, bananas or nut butter and enjoy!
